Light Vegetable Oat Soup

Healthy eating is a basis for long life. Unfortunately we live in a time where all rush and do not have time to eat healthy.

The soup except for lunch you can also eat for dinner. Is preparing for a very short time and is ideal meal to recover the energy during the day. Oats gives extra energy to the body.

Ingredients

1-2 carrots

½ kg. spinach

1/3 parsnips

1/3 celery root

1 handful of oat flakes

Salt and pepper to taste

Preparation

Carrot, parsnip and celery chopped and boiled in water. At the end add more water if needed (liter and a half to two), let it boil, add chopped spinach and oat and all this boil for 5-6 minutes. Add salt and pepper.

This soup can be prepared with other ingredients: broccoli, potato, cauliflower … Instead of oatmeal can be used pasta or rice.
